CHICKEN BAKED IN ORANGE MARMALADE & CURRY

4 Chicken thighs - skin on
About 1/2 cup of flour
1 tsp of salt & pepper divided
1 cup of a orange marmalade
1/2 - 3/4 cup of water
2 tbsp of curry powder - I the strength you like
2 tbsp of cooking oil 

 

Preheat your oven to 375*

Add the flour and half of the salt and pepper to a shallow bowl. Dredge the chicken in it and brown on both sides until golden. Place into a baking dish. 

Combine the marmalade, water and the rest of the salt & pepper. Mix well and pour over your chicken. Bake for at least 1 hour or until the juices of the chicken run clear. If you want, you can turn the oven to broil for a few minutes once it is done.

Want to spice this up a bit? 

- Switch out the water for orange juice or even cranberry juice

- add in some fresh or garlic powder to the liquid

This is great served over rice.

Freezes perfectly and reheats well.
